vegan-food.net 2012-01-09T23:20-08:00 Teriyaki Sauce (Version 2)( Condiments - Sauce ) Daily Random RecipeINGREDIENTS: 1 onion A bit of shredded horseradish (about a t or so...) 2 stalk leeks 1 stalk of celery 2 tomatoes PepperMETHOD:I chopped the onion, sliced the leeks and "peeled" the celery and cut it into quarters, which I sliced. Then I fried the onion and horseradish together for about five minutes, added the leeks and fried for a short while and then the celery - fried again for about ten minutes. Added a big splash of teriyaki sauce (on a dry pan, like with the last one) and blended it in - then I added the tomatoes, squashing them into the frying pan, to break them and to get the fluids from them, added water - let it all simmer for a while, with a lid on it (while the rice setteled) and added a bit of pepper as it was almost done. NOTES:This was a bit more spicy and the horseradish added an interesting extra touch - but still sweet and very wintery. This one I had with rice.
Aromatic Lentils and Sweet Potatoes( Legumes - Lentil ) Daily Random RecipeINGREDIENTS:1 T oil 2 cups chopped leeks (white part only) 2 cups raw sweet potatotes, cubed 2 tomatoes, peeled & chopped 1 T herbes de provence 1/2 cup dry white wine 2 T tomato paste 2 t cinnamon 1 1/2 cups lentils 3 cups vegetable broth Salt, pepper, cayenne pepper METHOD:Preheat oven to 400F/205C. In a large heavy oven proof casserole, heat the oil. Saute the leeks, sweet potatotes, tomatoes and herbs for 5 minutes. Stir in wine, tomato paste, cinnamon, lentils, seasoning and broth. Cover & bake 90 minutes. Yield: 4 servings.
