Boolawnee (Fried Leek Pastries)( Appetizers - Pastry )
Daily Random RecipeINGREDIENTS:Pastry2 cups plain flour1/2 teaspoon salt2/3 cup cold waterLeek Filling2 whole leeks; (2 leeks = 3 cups chopped)2 teaspoon salt1/4 teaspoon hot chilli pepper3 teaspoon oilOil; for deep fryingMETHOD:Sift flour and salt into a bowl, make a well in the center and add water. Mix to a firm dough and knead for 5 minutes until elastic, dusting with more flour if necessary. Wrap in plastic film and leave to rest for 30 minutes.Cut most of the green tops from leeks, halve lengthwise and rinse well to remove all traces of soil between leaves. Remove roots and dry leeks with paper towels. Place flat on board, cut along length at 5 millimeter / 1/4 inch intervals then across to dice. Measure in cup measure and place in bowl. Add salt and chili pepper and knead with hand to soften leeks. Stir in oil.Roll pieces of dough into balls the size of a large hazelnut and roll thinly into a 10 centimeter / 4 inch circle. Alternatively roll out dough and cut into 10 centimeter / 4 inch rounds.Place about 2 teaspoons leek filling in center of circle, moisten pastry half way round edge of circle and fold pastry over filling. Press edge to seal well, and using the edge of a thimble, (the traditional method) or a coffee spoon make little crescent-shaped marks around the edge, or press with fork.Fry 3 or 4 at a time in hot oil until golden brown, turning to brown evenly. Drain on paper towels and serve hot or warm.

Daily Random RecipeINGREDIENTS:1 quart / 1 L vanilla soy milk 4 t maple syrup 1/4 cup brandy or 1/2 t brandy extract 1 t cinnamon 1/4 t nutmeg 1/8 t cloves METHOD:In a pitcher/jug/thing combine all, stir well, serve chilled.

Okra Patties( Patties - Vegetable )
Daily Random RecipeINGREDIENTS:1 cup of okra1/2 cup whole wheat flour1 egg substitute - lightly beaten (sometimes I use ground flax seed and water)1/4 cup minced onion1/4 cup grated carrot1 clove garlic, minced or crushed1 tablespoon shoyu1/4 teaspoon curry powderOil for deep-fryingMETHOD:Combine the first nine ingredients, mixing well, and shape into patties. Heat the oil to 180C/350F in a wok, skillet or deep-fryer. Drop in patties and deep-fry until crisp and golden brown.NOTES:If deep-frying is inconvenient, patties may be fried or broiled. Also, try adding cooked brown rice.

Daily Random RecipeINGREDIENTS:2 x 10 oz / 280 g packets silken tofu 16 fl oz / 470 ml vanilla soy milk or rice milk 1 T vanilla extract 1/4 cup sugar 2 T brown sugar 1/4 t turmeric 1/2 - 1 cup brandy or rum Nutmeg optional METHOD:In the blender combine all except the nutmeg, blend thoroughly, serve chilled dusted with nutmeg.NOTES:My notes from the author say it is the real mccoy.

Knishes( Appetizers - Pastry )
Daily Random RecipeINGREDIENTS:Dough 1 cup mashed potatoes 1 T oil 1 t salt 3 cups unbleached flour 1 t baking powder 1/2 cup cold water Filling 1 cup chopped onions 2 T oil 1 1/2 cups mashed potatoes 1 1/2 cups mashed tofu 1/4 cup chopped fresh parsley 1 t salt 1/2 t garlic powder 1/4 t black pepper METHOD:Prepare 2 1/2 cups mashed potatoes. To make the dough, beat together 1 cup of the mashed potatoes, the 1 T oil and the salt. Add the flour and baking powder and mix well. Mix in the water and knead into a smooth dough. Let rest on a board covered with a cloth for 1/2 hour. To make the filling, sauté the onions in the T oil until transparent. Mix together with the rest of the filling ingredients. Cut the dough into 4 sections, then roll each section as thin as possible (about 1/16 inch / 1.6 mm thick). Cut into 5 x 6 inch (13 x 15 cm) rectangles. Place 2 or 3 T of filling in the middle of each rectangle. Fold the sides in first, then the ends. Place folded side down on an oiled cookie sheet. Bake at 350F/180C for 25 minutes, or until golden. Serve with horseradish or mustard. |

Daily Random RecipeINGREDIENTS:1/4 cup flax seed1 cup water1/2 cup pignoli nuts2 tablespoons carob2 tablespoons maple syrup]] or 4 [[dates, pitted1 teaspoon vanilla extractMETHOD:Soak the flax seed in one cup water for 24 hours. Soak and drain pignoli nuts. Add remaining ingredients to this flaxseed mixture and liquify. Chill before serving.NOTES:You better double this recipe. Tofu Quiche with Spinach and Broccoli( Quiche - Tofu )
Daily Random RecipeINGREDIENTS:1 sheet of ready made pie crust (pre cook for 12 minutes - checking) 1 medium onion, finely chopped 2 cloves minced garlic 1 lb / 450 g (your choice) broccoli or spinach, cooked to just done 1 lb / 450 g firm tofu, drained 1/2 cup soy milk 2 T soy parmesan cheese 1/4 t dijon mustard 3/4 t salt 1/4 t ground nutmeg 1/2 t ground red pepper METHOD:Cook your veggie of choice until just soft. Cook onion and garlic until golden, and add veggie and heat through. In blender, puree tofu, soy milk, mustard, salt, nutmeg, pepper, and soy cheese, until smooth. Pour into large bowl and add the onion and veggie mixture. Combine well. Pour into pre-cooked pie shell, and bake at 400F/205C for 35-40 minutes or until quiche is set. Allow to sit for 5 minutes before cutting. Serves: 6 Preparation time: 20 minutes |
