West African Soup( Soup - Legume )

Daily Random RecipeINGREDIENTS:2 cups onion (sliced into rings and then cut rings in half)2 teaspoons olive oil1/3 cup peanut butter6 cups sweet potatoes (peeled, but into 1inch cubes)2 (15.5 oz) cans garbanzo beans(chick peas), undrained1 (32oz) vegetable broth1 (28oz) can crushed tomatoesground cumin, salt, pepper, cayanne pepperMETHOD:1. Heat oil over medium heat, saute onions until they begin to brown.2. Add all ingredients in large pot. Raise heat to bring to boil3. Reduce heat to low and cover and let simmer for 45 minutes or until sweet potatoes are softened.NOTES:Makes about 8 servings.
